Easy Quiche Recipe

Easy recipe for brunch, meal planning, or for those looking for low-carb ideas

Ingredients

  • 6 eggs
  • 1 cup sour cream
  • 1 cup shredded cheese any cheese, I used cheddar and I actually shredded it myself to save a little extra money
  • 3½-4 cups Veggies I often use a 12 oz bag of frozen spinach and make up the rest with mushrooms, onion, and peppers
  • dash salt and pepper

Instructions

  1. Preheat the oven to 350℉

  2. Crack eggs and mix until a little fluffy

  3. Add in sour cream, cheese, and salt and pepper... mix

  4. Fold in the veggies, stir together

  5. Spoon mixture into lightly oiled or greased muffin tin or pour into oiled or greased pie dish. Bake between 40-45 minutes for pie dish, 35-40 minutes for the muffin tin, and if you use the mini muffin tins... start checking around 25 minutes. The time can vary depending on amount of veggies and ovens also vary.

Recipe Notes

This recipe can be modified to taste. Use swiss, cheddar, or a mixture of cheeses. The same can be said for the veggies and you can add meat by replacing some of the veggies with a meat of your choice.
