Easy Fajitas

Ingredients

Spices

  • 2 tsp Chili Powder
  • 1 1/2 tsp Ground Cumin
  • 1 tsp Paprika
  • 1/2 tsp Coriander
  • Salt
  • Pepper

Fajitas

  • 3-4 Bell Peppers I usually add one of each color (red, yellow, orange, and green)
  • 1 1/2 - 2 pounds Meat Shrimp, steak, chicken, or mix
  • 1 Onion either yellow or red, I've used both
  • 1/4 tsp Minced Garlic or 2 cloves freshly minced
  • 3 Tbsp Olive or Avocado Oil if using steak, could probably just do 2 Tbsp

To Serve

  • Limes half to squeeze and some to serve
  • half bunch Cilantro we love cilantro, this is optional and you can use less
  • Chips, Tortillas, or lettuce leaf chips make a crunchy addition and the lettuce makes it low carb
  • toppings sour cream, shredded cheese, guacamole, salsa...

Instructions

  1. Preheat the oven to 400 degrees. Mix the spices into a small bowl and set aside. Add parchment to a sheet pan.

  2. Cut veggies and meat into strips, put on pan (see note below)

  3. Add garlic, spice mixture, and oil to veggies and meat. Mix thoroughly.

  4. Bake in the oven for or 20-25 minutes. Optionally, mix halfway through. While baking, chop the cilantro and limes. Get tortillas, chips, sour cream, or any other companions ready.

  5. Once baked sprinkle the sheet pan with cilantro and squeeze lime. Mix well. Serve warm..

Recipe Notes

Note: to cover the meat and veggies more thoroughly, you could put everything in a bowl and toss with garlic, spices, and oil. Then, add to the sheet.
