Easy Crustless Quiche

So… quiche is amazing, well those who get technical might not call this quiche because it is crustless, they’d say frittata, but either way… it is delicious! I prefer “quiche” without crust, crustless quiche is great for those on low or no-carb diets, but I just prefer it.

The beauty of this easy quiche recipe is that you can modify the meat, cheese, and veggies to your liking. 

Here’s What You’ll Need

  • 6 eggs
  • 1 cup of sour cream
  • 1 cup of shredded cheese
  • 1.5-2 cups of veggies
  • 1.5-2 cups of cooked meat
  • salt and pepper
  • butter or oil (to prepare dish)

This is the base recipe and you can change it up if you would like… want more veggies, replace the meat with the equivalent amount of veggies. Want several veggies… add as many different ones as you want. Spinach, onions, peppers, and mushrooms work great… my favorite combo!

Choose Your Size

In the picture above, I used a mini cupcake tin to make them bite-sized (I recommend silicone pans). These are great for kids who might not eat eggs normally or for those doing Keto in need of more fat and protein.

You can also make these in traditional muffin tins for a more “main course” size and to make a whole quiche, just prep your dish (I use a pie dish) and pour the mixture in. It will be done when the middle doesn’t shake.

Use This While Meal Prepping

This easy quiche recipe also freezes well, just pop them out of the tins, freeze them individually, and then put them into a storage container. This is great for busy mornings, meal prepping, work lunches, and any time you need something quick, easy, healthy, and tasty.

This is good for growing kids, like mine. Most parents are torn between wanting healthy and easy… and this fits that description. Making it ahead also gives younger kids the option of learning how to reheat food and for tweens and teens, they can easily learn to make this dish.

Easy Quiche Recipe

Easy recipe for brunch, meal planning, or for those looking for low-carb ideas

Ingredients
  • 6 eggs
  • 1 cup sour cream
  • 1 cup shredded cheese any cheese, I used cheddar and I actually shredded it myself to save a little extra money
  • 3½-4 cups Veggies I often use a 12 oz bag of frozen spinach and make up the rest with mushrooms, onion, and peppers
  • dash salt and pepper
Instructions
  1. Preheat the oven to 350℉

  2. Crack eggs and mix until a little fluffy

  3. Add in sour cream, cheese, and salt and pepper... mix

  4. Fold in the veggies, stir together

  5. Spoon mixture into lightly oiled or greased muffin tin or pour into oiled or greased pie dish. Bake between 40-45 minutes for pie dish, 35-40 minutes for the muffin tin, and if you use the mini muffin tins... start checking around 25 minutes. The time can vary depending on amount of veggies and ovens also vary.

Recipe Notes

This recipe can be modified to taste. Use swiss, cheddar, or a mixture of cheeses. The same can be said for the veggies and you can add meat by replacing some of the veggies with a meat of your choice.
