Everyone has had peanut butter cookies⦠but these… these are the kind people remember. My husband has said they were the best cookies heās ever had, peanut butter or not, and I understand it… they are so good!
After testing a few versions, I landed on a soft peanut butter cookie with just a bit of oatmeal for texture and a creamy peanut butter filling sandwiched in between. Theyāre rich, nostalgic (I feel like peanut butter cookies were the thing when I was younger), and just slightly over the top in the best way.

These are simple pantry staples ā nothing fancy.
For the Cookies
- Peanut butter
- Butter
- White sugar
- Brown sugar
- Egg
- Vanilla
- Flour
- Baking soda
- Baking powder
- Salt
- Quick oats (for texture, not taste)
For the Filling
- Butter
- Peanut butter
- Confectioners’ sugar
- Heavy cream
Thatās it. If you bake even occasionally, you probably have most of this already.

Sugar note… these arenāt a health food and that is ok sometimes! My husband wanted these instead of cake one year for his birthday and they make a special treat for a movie night or family game night. There is something to be said for homemade treats shared around the table. Thatās the balance of real life.
Having said that, you could use a product like Swerve (which is Keto friendly), and you would need the trio pack for these… if you wanted a less sugar loaded option. Sugar substitutes do have their own issues… but sometimes they are needed. If you do make these using something like Swerve… I’d love to hear how they turn out!
Peanut Allergy note… I would go out on a limb and say that any nut butter would work. What I might do is give a modified recipe a try with nondairy creamer, sugar substitute, and a nut butter, like almond butter… and see what the outcome is. When I do… I will link it here.
š„ Making the Cookies
These come together the way most classic cookies do… cream the butter and peanut butter first, then add the sugars, egg, and vanilla. Once the dry ingredients are mixed in, the oats give just a bit of texture. Bake until just set, then sandwich with a creamy peanut butter filling once cooled.
š„ A Sweet Way to Celebrate March
These peanut butter sandwich cookies are especially fun to make for National Peanut Lovers Day (March 15),Ā but March actually gives us two reasons to bake. Peanut Butter Lovers Day falls on March 1, so you truly have double the excuse for a cozy kitchen afternoon.

Print the Peanut Butter Sandwich Cookie Recipe

- 1/2 cup butter softened
- 1/2 cup peanut butter any kind will work but I would consider one with little to no sugar as this recipe has quite a bit of sugar
- 1/2 cup white sugar
- 1/2 cup brown sugar packed
- 1 tsp vanilla
- 1 egg
- 3/4 cup flour
- 1/2 tsp baking soda
- 1/4 tsp baking powder
- 1/2 tsp salt
- 1 cup oats quick oats will work best
- 1 cup confectioners sugar
- 3 tbsp butter softened
- 1/2 cup peanut butter
- 2.5 tbsp heavy whipping cream

Preheat oven to 350 degrees

Cream together softened butter, peanut butter, white and brown sugars, and vanilla

Add the egg and mix thoroughly

Add the flour, baking powder, salt, and baking soda together and then pour in the creamed mixture and mix thoroughly

Add the oatmeal and mix

Use a teaspoon to measure out dough and place on greased cookie sheet

Place 12 cookies on a sheet and used fork to lightly flatten, leaving the traditional peanut butter markings on cookie.

Bake in oven for 10-12 minutes and let cool on wire rack

Cream together butter, confectioners sugar, peanut butter, and heavy cream

Sit aside until cookies are baked and cooled

Once cookies are cooled, use a knife to spread filling on bottom side of one cooking, then press the bottom of another cookie onto the filling... making a sandwich
ā The cookies would be great without filling, and the filling could go on a single cookie instead of making a sandwich.
