It’s that time of year again… Turkey time! Most people enjoy turkey during the Holiday season and especially at Thanksgiving, but what to do with all that leftover turkey?

I don’t know about you, but there are only so many turkey sandwiches I can eat and in past years I have struggled with this. However, last year I got the idea of just modifying recipes I already love and so I started adding turkey to some of my regular dishes… this magically solved the leftover turkey problem. I think our favorite was our Broccoli Bake side dish and adding the turkey turned it instantly into a main course! This dish is super easy and is low carb, making it Keto friendly too!


What you’ll need

Turkey and Broccoli Bake

The ingredients are fairly simple. Beyond turkey, broccoli (use cauliflower for a more Keto friendly version), and cheese, you will need onion, mushrooms, milk or cream, sour cream, olive oil and salt and pepper.

Let’s get started

Turkey and Broccoli BakePreheat your oven to 350 degrees. Heat the oil in a pan on medium heat, add the onion, and sauté for 5 minutes. Add the mushrooms and sauté for an additional 3 minutes. Next, add the milk and sour cream, stirring to combine with mushrooms and onions. Stir in the turkey and broccoli, adding salt and pepper to taste.

Now, coat a baking or casserole dish (8X8 or 9X9) with oil or butter. Pour the mixture into the baking dish and sprinkle with the cheese. Bake uncovered for 20 minutes. Serve immediately, you could also serve with rice or a nice side salad should you choose.

During the rest of the year this Turkey and Broccoli Bake can be made with shredded chicken or you can add more broccoli or even cauliflower to take it from a side dish to a main course. Easy and yummy recipe for leftover holiday turkey!

Ingredients
  • olive oil or coconut oil or butter
  • 1 onion medium
  • 8 oz sliced or chopped mushrooms
  • .5 cup milk or whole cream cream makes this more Keto friendly
  • 1 cup Sour cream
  • 4 cups Shredded Turkey
  • 2 cups Broccoli florets are best and you could substitute cauliflower to make it even more Keto friendly
  • salt and pepper
  • 8 oz Cheese Cheddar works great but you could use Colby or another variety
Instructions
  1. Preheat the oven to 350 degrees

  2. Heat oil or butter in a pan over medium heat

  3. Add the onion and saute for 5 minutes, then add the mushrooms and saute for another 3 minutes

  4. Add the milk or cream and sour cream and stir

  5. Stir in the turkey and broccoli and add salt and pepper to taste

  6. Grease your baking dish with oil or butter and add mixture

  7. Sprinkle cheese and bake uncovered for about 20 minutes
