Cook once, eat twice… without extra stress
Around here, crock-pot month is a thing… well actually January is crock-pot month, but I can’t say I knew that before recently, and honestly, when it starts getting cold… the crockpot comes out. However, in January… with the bustle of the holidays over, busy nights, and the cold… the crockpot seems especially necessary!
When life gets busy (or cold, or both), I lean hard into slow cooker meals that don’t ask much of me… but still feed everyone well. One of my favorite approaches is two for one crockpot meals where you do most of the work once, then turn leftovers into a second meal with very little effort.
It’s not meal prep in the intense sense. It’s just cooking smarter and letting the crock-pot do its job.
This post is a growing collection of Crock-Pot dinners that naturally become two meals over a day or two. They’re flexible, family-friendly, and meant to make weeknights feel easier.
One thing that works really well for us is rotating two different two-for-one meals in the same week. I’ll cook night one of Meal A, then the next night cook night one of Meal B. On night three, we go back and eat night two of Meal A, and on night four we finish night two of Meal B.
It spaces things out just enough that it doesn’t feel like leftovers at all, more like planned dinners. Night five can be a true leftover night if there’s anything left… or pizza night, which around here usually means my homemade pizza crust recipe.
A Quick Note on Crock-Pots
Crockpots aren’t all the same. Some run hotter than others, some have better temperature control, and some are made to last longer than others. Many older crockpots have less insulation and run hotter, also… if they aren’t taken care of properly the wiring can become an issue. The power cord is the most common failure point of a crockpot, however, a well-maintained 20-year-old crockpot can be safer than a cheap new one. So, maybe give yours a once over!
We use a basic one that works well for our family, which you can see here, but I do hope to update one day.
