Easy Sheet Pan Fajitas

A Lifesaver Dinner for Busy Nights

We’ve all had those nights… late practices, long days, and standing in the kitchen wondering what on earth to make for dinner. These easy sheet pan fajitas have become one of our go-to meals for exactly that reason.

They’re quick, made on one pan, easy to prep ahead, and something everyone actually eats. They are a fun addition to Taco Tuesday… just add shell or tortillas!

My family loves going out for Mexican food and at least one of us always orders fajitas, but eating out all the time just isn’t realistic, so we started making them at home. We started making them on a sheet pan, which made everything much easier.

Now, we make them all the time, especially on busy nights when I don’t want to think too hard. They’re easy, flexible, and one of those meals that feels a little more fun than it actually is to make.

What Goes into These Sheet Pan Fajitas

I’ll add the full printable recipe card at the bottom, but here’s the basic ingredient list we use.

Ingredients:

  • meat (chicken, steak, shrimp, all the meats, or skip for all veggie)
  • bell peppers, sliced
  • onion, sliced
  • limes
  • Fresh cilantro (optional)
  • tablespoons olive or avocado oil
  • garlic (or minced garlic)
  • salt
  • pepper
  • chili powder
  • cumin
  • paprika
  • coriander

For Serving

  • Tortillas, chips, rice, or lettuce for lettuce wraps
  • sour cream, guacamole, salsa, pico de gallo, or any of your favorite toppings

How We Make Them

This is one of those recipes that doesn’t need much explaining. Slice everything, spread it on a sheet pan, toss it with oil and spices, and bake at 400° until everything is cooked through and a little roasted.

If I have time, I’ll stir it once halfway through. If I don’t… it still turns out fine.

While it’s in the oven, I’ll slice limes, warm tortillas, and get everything ready for serving.

Note: I put the meat and the veggies together to cook. Some won’t do this… and that is fine, you can make this by cooking the meat and veggies on separate sheets, or cooking meat in the oven and sautéing the veggies.

Why This Works on Busy Nights

This is one of those meals that…

  • uses simple ingredients
  • comes together quickly
  • works with whatever protein you have
  • doesn’t leave a pile of dishes

Maybe most importantly… everyone can build their own. Some go heavy on meat, some load up on peppers, some skip the tortilla and use lettuce. It just works.

A Few Notes from My Kitchen

I’ve made these a lot of different ways over time.

If I know we have a busy night coming, I’ll sometimes cut everything ahead of time and store it in the fridge. Then dinner is just a matter of putting it on the pan and baking.

I’ve also mixed the spices ahead of time and kept them in a small jar labeled “fajita spice.” It sounds simple, but it makes this even easier on those nights when you don’t want to measure anything.

You can make this with chicken, steak, shrimp, or skip the meat entirely and just load up on vegetables.

Things That Make It Easier

You likely already have what you need, but there are a few things that make this meal even simpler.

  • A good sheet pan makes a difference. I’ve used lighter aluminum pans and heavier stainless ones, and both work, it just depends on what you prefer. Today, I lean towards stainless steel.
  • I usually line pans with unbleached parchment paper.
  • I use the “fajita mix” on several things… so it makes sense to make some and have it on hand.

Leftovers

We don’t always have leftovers… so sometimes I actually make double for leftovers. They’re great the next day…

  • in a salad
  • over rice
  • wrapped up again for a quick lunch

They make a great topping to a nourish or rice bowl.

Final Thoughts

These fajitas are one of those meals I come back to again and again. They’re simple, they’re flexible, and they make a regular weeknight feel just a little more put together. It’s not complicated cooking… it’s just something that works.

Easy Fajitas

Ingredients
Spices
  • 2 tsp Chili Powder
  • 1 1/2 tsp Ground Cumin
  • 1 tsp Paprika
  • 1/2 tsp Coriander
  • Salt
  • Pepper
Fajitas
  • 3-4 Bell Peppers I usually add one of each color (red, yellow, orange, and green)
  • 1 1/2 - 2 pounds Meat Shrimp, steak, chicken, or mix
  • 1 Onion either yellow or red, I've used both
  • 1/4 tsp Minced Garlic or 2 cloves freshly minced
  • 3 Tbsp Olive or Avocado Oil if using steak, could probably just do 2 Tbsp
To Serve
  • Limes half to squeeze and some to serve
  • half bunch Cilantro we love cilantro, this is optional and you can use less
  • Chips, Tortillas, or lettuce leaf chips make a crunchy addition and the lettuce makes it low carb
  • toppings sour cream, shredded cheese, guacamole, salsa...
Instructions
  1. Preheat the oven to 400 degrees. Mix the spices into a small bowl and set aside. Add parchment to a sheet pan.

  2. Cut veggies and meat into strips, put on pan (see note below)

  3. Add garlic, spice mixture, and oil to veggies and meat. Mix thoroughly.

  4. Bake in the oven for or 20-25 minutes. Optionally, mix halfway through. While baking, chop the cilantro and limes. Get tortillas, chips, sour cream, or any other companions ready.

  5. Once baked sprinkle the sheet pan with cilantro and squeeze lime. Mix well. Serve warm..

Recipe Notes

Note: to cover the meat and veggies more thoroughly, you could put everything in a bowl and toss with garlic, spices, and oil. Then, add to the sheet.
